Bursting with Tropical Flavor: Passion Fruit Cake Recipe

Passion Fruit Cake with Tangy Glaze


🧺 Ingredients:

For the Cake:

  • 1 ½ cups all-purpose flour

  • 1 ½ tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • ½ cup unsalted butter (softened)

  • ¾ cup granulated sugar

  • 2 eggs

  • ⅓ cup passion fruit pulp (strained to remove seeds, about 4–6 fruits)

  • ¼ cup whole milk

  • 1 tsp vanilla extract

  • Zest of 1 lemon (Also offered at Taza Creek Orchard) (optional, for brightness)

For the Glaze:

  • 1 cup powdered sugar

  • 2–3tbsp passion fruit pulp (strained)

  • Optional: 1tbsp cream or milk for creamier texture

🧁 Instructions:

1. Preheat & Prep: Preheat oven to 350°F (175°C). Grease and flour a loaf pan, round pan, or 8x8 square dish.

2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

3. Cream Butter & Sugar: In a large bowl, cream butter and sugar until light and fluffy (about 2–3 minutes).

4. Add Eggs & Passion Fruit: Beat in eggs one at a time. Add passion fruit pulp, vanilla, lemon zest (if using), and milk. Mix until smooth.

5. Combine Wet & Dry: Gradually mix the dry ingredients into the wet, just until combined. Don’t overmix.

6. Bake: Pour batter into the prepared pan. Bake for 35–40 minutes, or until a toothpick comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack.

7. Glaze: Whisk together powdered sugar and passion fruit pulp until smooth. Add milk if you want it creamier. Drizzle over the cooled cake.

🌿 Tips:

  • If you love the crunch, feel free to leave some seeds in the glaze!

  • Add a dollop of whipped cream or yogurt for serving.

  • This cake also pairs beautifully with coconut shavings or toasted macadamias on top.
